Hello Amigos!!  And why Hello Monday!  You’re here again?  So soon?

 How was everyone’s weekend & Mother’s Day?  Mine was just right!

 The highlight of the weekend was Gordita’s Dance Recital on Saturday.  She looked absolutely adorable in her costume.  You may remember that I mentioned I feared she wouldn’t dance on the BIG day.  Well I was wrong.  She shook what her momma gave her just fine.  In fact she brought me to tears.  I couldn’t help myself; I became overwhelmed with pride seeing my baby girl up there on that big stage, doing her thing.  She never ceases to amaze me.

Hello New Week.  I’m not sure about you, but I guess let’s get it started. 

 Hello Week 2 of Insanity.  Today is my rest day, boy am I thankful.  I have muscles that apparently I haven’t used in years that are all achy.

 Hello Laundry.  I’m so not ready to tackle you.  Wishing I could twitch my nose & you would wash & put your self away clothes.

Encouraging words on Mother’s Day #JOHNSONSBabyCares

Whoever coined the phrase “Being a mom is the toughest job.” was right on the money.  Nothing or no one can truly prepare you for the ride of your life.  Whether you’re a first timer, a seasoned mama or have multiple children, you’ll always feel challenged and sometimes even pushed to your limit.  However, I’m pretty certain that all those distressing moments will never outweigh the wonderful ones, such as nuzzling your sweet baby, playing and giggling with your son or chatting with your daughter.  These are the moments that make all the chaos worthwhile.

JOHNSON’S® Baby CARES, the brand’s charitable platform dedicated to improving the health of moms and babies, recently launched an e-card digital platform, which allows you to send upbeat messages to moms across the nation, all while raising funds for the global children’s humanitarian organization, Save the Children®.  Each digital Care Card created on Facebook, sent, shared or ‘liked’ JOHNSON’S Baby will donate $1.00 towards one of Save the Children’s® programs, such as Early Steps to School Success, an early childhood education initiative.

With Mother’s Day just a few short days away, I wanted to encourage the many mothers in my life.  I especially wanted to brighten the day of one friend in particular.  I met Toniann a few years back, when I was a consultant for a well known direct sales company and she was a guest at one of my parties.  We kept in contact through Facebook (of course).  Toniann is a first time mama to the cutest 8-month old twins.  She and I reconnected recently, when she introduced me to clean eating, in fact she’s now my BeachBody Coach.

I created a digital card for Toniann to let her know what a ROCKIN’ job she’s doing as a mom.

Toniann… Happy First Mother’s Day!  I just wanted to let you know that I think you’re doing a spectacular job.  Between juggling the babies, a hefty school load, maintaining a home,  dedicating yourself towards the health & wellness of others and yours… YOU ARE DOING IT!! Your hard work hasn’t gone unnoticed   You’re an inspiration!  Your beautiful twins are lucky to have you as their mother.

Hello Monday {Smiles & New Beginnings}

Hey Friends!  It’s Monday & you know what that means. It’s time to link up to the Lovely Lisa & say a few Hellos.

Today is the first Monday in sometime that I’m genuinely HAPPY.  For good reason of course.  Baby boy made it home late last week.  He was released from the hospital with a clean bill of health.  He’ll have several follow-up appointments and echo-cardiograms, but all and all, he’s expected to continue on a healthy path.

We surprised the Pollitos with our arrival.  They were ecstatic to see us and welcomed their brother home with open arms.  While they were screeching from delight, a wave of peace came over me.  Never in my 33 years, had I ever felt, what I would describe as wholeness.  I hadn’t even realized that “something” was missing until that moment.  Seeing their three little faces together made everything right in the world.  I have been BLESSED to have been chosen to guide & cultivate these amazing Pollitos.

Onto this week’s HELLOs…

Hello Second Grade!  The Lil’ Giant started school today.  This past summer just flew right by. Now here we are, the last week of August & Ryan is embarking on another school year.  Go Buddy!

Cute sign, right? Well what you can see of it.  I hadn’t realized I was running low on ink.  But anyhoo, one of the blogs I happen to adore. I Heart Naptime shared these adorable free Back to School printables.


Hello roller skates.  Gordita was elated when we came home with her first pair of roller skates & helmet.  She can’t seem to get enough of them.

On the topic of Ravyn, I’m convinced she grew in the week that we were apart.  It’s like she shot up over night.  Funny how that happens.

Hello to some sibling bonding over Saturday morning cartoons.  Check Rhys out, winking at me.

Hello to newborn smushiness, newborn smell, newborn smiles and everything else that comes with a new baby.  I can stare at this little face for hours at end.  Just studying it. Figuring out where each feature originates from.  Like the ginger hair, button nose, etc.  I’m in love!

Hello to Mami’s arrival.  My mom gets in today. She’ll drive me insane during her time here, but I’m really looking forward in seeing her & having her spend some time with her grand babies.

Hello to being the Mama of THREE Pollitos.  I’m in for it!  Time to grow another arm and possibly looking into surgical implantation of eyes in the back of my head.

Hello Monday {Belated Father’s Day Wishes}

Hola MiGente! How was everyone’s weekend? Mine was excellent!

I know I’m a day late and all. Plus it’s Hello Monday not Hello Third Sunday in June a/k/a Happy Father’s Day, but I just couldn’t get myself “plugged in” this weekend. So, without further ado…. Happy Father’s Day.  And a special moment to 2 of the most important men in my life.

There’s nothing like the relationship you have with the first man in your life… your dad. I call my special guy, CouCou. It’s a pet name I gave him when I was about 2 years old & it has stuck. My kids even call him Grandpa CouCou. My viejito has been an extraordinary man. He’s guided me through so many obstacles & continues to do so, by sharing his words of wisdom. Although, he may not be my biological father, he’s the ONLY one that will ever count. He’s raised me since I was about 8 months old & I couldn’t imagine my life without him. The man upstairs really knew what he was doing, when he brought CouCou into my life. And of course my mom’s life too. If only he & my mom didn’t live in Florida. We don’t get to see each other as much as I would like. I love you to the sky viejito!

I look at a picture like the one below…the very first of my hubby and our first born, the Lil’ Giant and I can’t even fathom how he would’ve evolved into this great daddy.  Here we are almost 7 years later & about to have our 3rd Pollito and there is no doubt in my mind that our kiddos have an AMAZING daddy, that will put everything on the line for them.  I love you, Babe. Thank you for all you do!

Hello to Party Planning! Our house is going to be JUMPING this weekend.  We’re hosting our annual BBQ this Saturday. We’re looking forward to seeing friends & family that we don’t get to see often. Great food + Great friends + Lots of Laughs is sure to = An Amazing Weekend!

Following the BBQ, we’re gonna keep the party going by having a “Sprinkle” Shower on Sunday. It should be a laid back soiree to celebrate the impending arrival of the bambino.

Easiest and Tastiest Spiral Ham {Recipe}

I am soooo late in releasing this blog post. It’s been sitting drafted in my dashboard without the finishing touches, for a little over two weeks. In the words of my daughter: Me, bad little blogger.

So, today I wanted to share with you the Easiest & Tastiest Spiral Ham you’ll ever make. My MIL shared this recipe with me. And it was passed to her by her late sister-in-law, Diana. My daughter is her name sake. Her middle name actually.

Ingredients:

  • 1 10lb Spiral Ham
  • 1/2 cup of packed Brown Sugar
  • 1/4 cup of packed Brown Sugar
  • 1/4 cup of Water
  • 1/4 cup of Cloves
  • 10 oz bottle of Saucy Susan (peach-apricot glaze)
  • 1 can of Pineapple slices
  • 1/4 cup of Maraschino cherries
  • 4 oz bottle of Ham glaze
  • Wooden toothpicks

Instructions:

  1. Preheat oven to 375°
  2. Place ham in a baking pan. Dissolve brown sugar with 1/4 cup of warm water. Apply mixture onto ham. Press the cloves into the sliced ham top. When pressing the cloves towards the front edge of the ham, be careful as the ham may spread. I use the wooden toothpicks, to perform what I call surgery to keep it all together. 
  3. Cover the ham with foil. Make sure to tent the foil. Bake for 2 hours. I calculate the cook time by the pound at 15 minutes. So for a 10lb ham, you’re cooking it for 150 minutes or 2 hours and 30 minutes.
  4. In the meantime mix the entire contents of the Saucy Susan, ham glaze, juice from the pineapple slices, 1/2 of the juice from the maraschino cherries and 1/4 cup of brown sugar in a mixing bowl. Refrigerate. 
  5. Following the 2 hours in the oven, pull out your ham & remove the cloves. Evenly spread out the pineapples onto the ham, using the wooden toothpicks to hold them. Place a maraschino cherry in the middle of each pineapple, again using the toothpicks. Spread 3/4 of the glaze mixture on top of the ham.
  6. Place the ham back into the oven, tented with aluminum foil for another 30 minutes, basting frequently. Use a meat thermometer to confirm the internal temperature of 160 degrees. Make sure that the thermometer does not touch the bone.
  7. Once fully cooked, remove the pineapples and cherries & begin to slice. I typically just pull the slices off without the use of a knife.
  8. Serve the ham topped with pineapples, cherries and the saved glazed mixture.

And there you have it, the Easiest and Tastiest Spiral Ham.  Perfect for the Holidays. This ham makes an appearance every Noche Buena (Christmas Eve) feast. And this year I made it for Easter too.

Oh and if you’re gonna ask if this recipe is Weight Watchers friendly or how many calories does it contain. I will have to look at you like a deer in head lights. Let me clue you in on us Spanish Folk, our meals tend to be filled with lots of butter, oil, mayonessa, love and lots of calories. So note, that after eating this ham you’ll most definitely have to work it, either at the gym or hit the pavement. But I will admit, it’s TOTALLY worth it. And so are many more of our signature meals.
